Liver (and other organ meats), if grass-fed/finished or cage-free, is possibly the most nutritionally dense food on the planet. It’s rich in protein, low in calories, and packed with vitamins and minerals. Eating just 50-100 grams of liver will provide an impressive amount of the below nutrients in an easily absorbable form and help them to work synergistically.

Now that’s a lot of nutrients, especially Vitamin A. Because vitamin A is fat-soluble, it’s stored in body tissue for later use. Most of the vitamin A in your body is kept in your liver in the form of retinyl esters. It helps maintain surface tissues such as your eyes, skin, intestines, lungs, bladder, and inner ear.
Our bodies need all of these to repair themselves and create strong teeth and bones!
Ingredients:
1lb grass fed beef
4TBS chicken liver pate (recipe available)
1 TBS grass-fed lard
¼ cup coconut cream
1TBS EVOO (extra virgin olive oil)
1 delicate squash, deseeded and thinly sliced
¼ cup Mamas lil red peppers diced
1 bundle of broccolini chopped
Chopped herbs- basil, oregano, rosemary, parsley
1 package cauliflower gnocchi
Directions:
Sauté beef, red onion, and lard together until meat is browned.
Add salt and pepper to your taste.
Then drain excess oils from the beef into your water pot (for gnocchi) this will bring more flavor!
Start boiling gnocchi. Drain when all the gnocchi have floated to the top. Set aside.
Add delicata squash, broccolini, mama’s lil red peppers to the beef mixture, and mix.
Cover and simmer on low-med until veggies soften (10 minutes or so)
Add liver pate, coconut cream, and EVOO. Mix thoroughly.
Lastly, add your gnocchi, and carefully mix as not to break apart gnocchi due to its creamy texture.
Sprinkle your fresh chopped Italian herbs and serve.
